scallion cakes

I’ve eaten 3 batches of these green onion pancakes. That is more than enough to satisfy the yearning for home food section of the brain . Previously, the dough always comes out mushy which is not fun because I have to stick my hands into it. Finally figured out that it’s because the recipe uses the same measuring cup for measuring flour and water too .

The recipe:

Mince up a lot of green onions ( I use around 5 stalks ) and place them on a towel to soak up the moisture.

Mix 2 cups all purpose flour + 1/2 tsp salt with 1/2 cup hot water. Use a fork and mix until crumbly then add in 1/2 cup cold water. Mix with fork until it gets too stiff to do so, switch to hand kneading ( or a machine ; kneading with hands is more fun, provided that it is not mushy, and less noisy for me . ) Knead until elastic , cover well and let sit for 20 minutes or more .

Knead the dough out again, divide into 5 pieces . Roll it out flat and wide, spray with Crisco olive oil, sprinkle minced green onions all over . Now, starting from the bottom of the pancake, roll it up to the top. Then roll up the ‘ roll ‘ sideways so that now it looks like a snail ? lollipop ? Flatten it out with the palms of your hand and roll it flat again . Do this with the remaining 4 pieces.

Fry the pancake over low heat until golden on both sides. Sprinkle with salt before eating.

Notes : These can be frozen. Just plastic wrap them individually.
